Ingredients:
6 tbs of vegetable oil
1/2 small red onion, finely chopped
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp baking soda
1 tsp cayenne pepper
1 cup grated cheddar cheese
1 cup milk
1 egg
1/2 cup baby spinach, roughly chopped
Makes 12 muffins
Process:
- Preheat oven to 350°F.
- Meanwhile in a saucepan heat 1 tbsp of oil over medium heat and fry the onion until cooked. Set aside.(if you are using fresh spinach, you can add the spinach long with the onions and cook them down).
- In
a large bowl stir together flour, baking powder, baking soda cayenne and cheese. In a
separate bowl, whisk the milk, oil and egg together, then slowly pour into the
flour mixture and fold it in (take care not to over mix) .
- Stir
in the onion and spinach (roughly chopped) with a wooden spoon until
evenly dispersed.
- Spoon batter into muffin tins lined with paper liners. Fill about two thirds full. Bake in preheated oven for 20-25minutes, or until golden and a toothpick inserted in the center comes out clean. Place the muffins on a wire rack to cool
